Characteristics: Appears a compact, opaque ruby. The nose displays dark cherry preserves, pomegranate juice and wild raspberry, yielding to fragrant hints of cinnamon, tanned leather and pipe tobacco. The palate is full-volumed, seductive and velvety, with generous, glossy tannins. The finish is irresistibly appealing, inviting a further sip.
Food pairing Gnocchi with duck ragout.

Vinification As soon as the clusters are picked, they are brought to the cellar and pressed. Cultured yeasts are added to the must, which then ferments some 15 days at 24-26 °C, about 10 of which on the skins.
Aging The wines matures 18 months in oak barrels, then it receives a minimum of four months' bottle-ageing.
